Description

A delicious and comforting casserole dish combining ground beef, sausage, rice, and vegetables.

Ingredients

Scale
  • 1 pound ground beef
  • 12 ounces beef sausage, sliced
  • 1 cup long-grain white rice (uncooked)
  • 1 small onion, diced
  • 1 small green bell pepper, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 (14-ounce) can diced tomatoes, undrained
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup shredded cheddar cheese

Instructions

  1. Brown the Meat: Start by preheating your oven to 350°F. In a large skillet over medium heat, cook the ground beef and sliced beef sausage together. As they brown, the savory aroma will start to build the foundation of this Jailhouse Rice. Break up the ground beef with a wooden spoon and cook until no pink remains. Drain excess grease if needed.
  2. Sauté the Vegetables: Add the diced onion, green bell pepper, and minced garlic to the skillet. Cook for about 3–4 minutes until the vegetables soften and become fragrant. This step adds depth and sweetness that balances the hearty meat.
  3. Combine the Ingredients: Stir in the uncooked rice, beef broth, diced tomatoes (with their juices), smoked paprika, thyme, salt, and pepper. Mix everything well so the rice is evenly distributed and fully coated with flavor.
  4. Bake to Perfection: Transfer the mixture to a greased 9×13-inch baking dish. Cover tightly with foil and bake for 45–50 minutes, or until the rice is tender and has absorbed the liquid. The magic of Jailhouse Rice happens in the oven, where everything melds together into a rich, comforting casserole.
  5. Add the Cheese: Remove the foil, sprinkle shredded cheddar cheese evenly over the top, and return to the oven for 5–7 minutes until melted and bubbly. Let it rest for 5 minutes before serving. This helps the flavors settle and makes scooping easier.
