Description

Ingredients

  • 1 tablespoon grated fresh ginger
  • 3 cloves garlic, minced
  • 6 cups vegetable or chicken broth
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 (16-ounce) bag of frozen potstickers (any variety: chicken, vegetable, beef, or lamb)
  • 2 cups sliced mushrooms (shiitake or cremini)
  • 3 green onions, thinly sliced
  • 2 cups baby spinach or chopped bok choy
  • Sea salt and freshly ground black pepper, to taste
  • Optional garnish: extra green onions or a drizzle of sesame oil

Instructions

  1. In a large soup pot or Dutch oven, warm the toasted sesame oil over medium heat. Add the fresh ginger and minced garlic, stirring for about 1 minute until fragrant. This quick step builds the base of the soup’s savory depth—don’t skip it!
  2. Pour in the broth, soy sauce, and rice vinegar. Bring the liquid to a simmer. It’s here that the broth starts transforming into something rich and restorative, thanks to the ginger and garlic swirling through.
  3. Toss in the sliced mushrooms and let them cook for 3–4 minutes until just tender. They soak up the flavors while adding an earthy dimension to the soup.
  4. Carefully add the frozen potstickers straight from the bag. Simmer gently according to the package directions—usually about 5 to 6 minutes—until they’re cooked through and floating.
  5. Just before serving, stir in the spinach or bok choy and sliced green onions. Cook for another minute until the greens are wilted but vibrant.
  6. Season with salt and pepper as needed. You can also drizzle a little extra sesame oil for added depth.
  7. Ladle the soup into bowls, making sure each gets a good helping of potstickers, mushrooms, and greens. Top with a few extra green onions if desired.
