  • 4 salmon fillets (skin-on, about 68 oz each)
  • 2 tbsp olive oil
  • Salt & black pepper, to taste

  • ½ cup lump crab meat (picked over for shells)
  • ½ cup cooked shrimp (chopped)
  • ½ cup cream cheese (softened)
  • 2 tbsp mayonnaise
  • 2 tbsp Parmesan cheese (grated)
  • 2 tbsp green onions (chopped)
  • 1 tbsp fresh parsley (chopped)
  • 1 tsp Old Bay seasoning (or Cajun seasoning)
  • 1 tsp lemon juice
  • ½ cup mozzarella (shredded, optional for extra melty filling)
  • ½ cup panko breadcrumbs
  • 2 tbsp butter (melted)
  • 1 tbsp parsley (chopped)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pat salmon fillets dry, drizzle with olive oil, and season lightly with salt and pepper.
  3. Using a sharp knife, cut a slit down the center of each fillet to form a pocket (don’t cut all the way through).
  4. In a bowl, combine crab meat, shrimp, cream cheese, mayo, Parmesan, green onions, parsley, Old Bay, lemon juice, and mozzarella. Mix until creamy and well combined.
  5. Spoon the seafood mixture into each salmon pocket. Press gently to secure filling inside.
  6. In a small bowl, mix panko breadcrumbs with melted butter and parsley. Sprinkle generously over stuffed salmon.
  7. Place salmon fillets on a parchment-lined baking sheet or casserole dish. Bake for 20–25 minutes, or until salmon is cooked through and topping is golden brown.
  8. Drizzle with melted butter or garlic lemon butter sauce. Garnish with fresh lemon slices and parsley.
