- 4 boneless, skinless chicken fillets
- 4 oz brie cheese, sliced
- 1/4 cup cranberry sauce
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Preheat oven to 375°F (190°C).
- Cut a pocket into each chicken fillet.
- Stuff each pocket with brie and cranberry sauce.
- Season chicken with salt, pepper, and thyme.
- Heat oil in an oven-safe skillet over medium heat.
- Sear chicken for 3 minutes per side.
- Transfer skillet to oven and bake for 15 minutes.
- Let rest for 5 minutes before serving.
Notes
- For a variation, add chopped nuts or fresh herbs to the stuffing.
- Serve with a side salad for a complete meal.
