  • ¼ cup granulated sugar (for filling)
  • 1 egg yolk (for filling)
  • ½ tsp vanilla extract (for filling)
  • ½ cup all-purpose flour (for streusel)
  • ¼ cup brown sugar (for streusel)
  • ¼ cup granulated sugar (for streusel)
  • ½ tsp cinnamon (for streusel)
  • 4 tbsp unsalted butter, melted (for streusel)
  • ½ cup powdered sugar (for glaze)
  • 12 tbsp milk or cream (for glaze)
  • ½ tsp vanilla extract (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a bowl, beat cream cheese, sugar, egg yolk, and vanilla until smooth. Set aside.
  3. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a large bowl, whisk oil, sugars, eggs, and vanilla until smooth.
  5. Stir in grated carrots.
  6. Gently fold in the dry ingredients until just combined. Mix in nuts or raisins if using.
  7. Combine flour, sugars, cinnamon, and melted butter with a fork until crumbly for the streusel.
  8. Spread half the carrot batter into the loaf pan.
  9. Spoon cream cheese filling evenly over the batter.
  10. Add the remaining carrot batter, smoothing the top.
  11. Sprinkle streusel topping over the loaf.
  12. Bake for 50–60 minutes, or until a toothpick inserted into the cake part comes out clean.
  13. If browning too quickly, cover with foil during the last 15 minutes.
  14. Let loaf cool in the pan for 15 minutes, then transfer to a wire rack.
  15. Whisk glaze ingredients and drizzle over cooled bread. Slice and enjoy!
