A delicious and moist carrot cake loaf filled with a creamy cheese filling, topped with a crunchy streusel.

- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon

- 2 large eggs

- 1 ½ cups finely grated carrots

- 8 oz cream cheese, softened
- ¼ cup granulated sugar (for filling)
- 1 egg yolk (for filling)
- ½ tsp vanilla extract (for filling)

- 4 tbsp unsalted butter, melted (for streusel)
- ½ cup powdered sugar (for glaze)
- 1–2 tbsp milk or cream (for glaze)
- ½ tsp vanilla extract (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- In a bowl, beat cream cheese, sugar, egg yolk, and vanilla until smooth. Set aside.
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, whisk oil, sugars, eggs, and vanilla until smooth.
- Stir in grated carrots.
- Gently fold in the dry ingredients until just combined. Mix in nuts or raisins if using.
- Combine flour, sugars, cinnamon, and melted butter with a fork until crumbly for the streusel.
- Spread half the carrot batter into the loaf pan.
- Spoon cream cheese filling evenly over the batter.
- Add the remaining carrot batter, smoothing the top.
- Sprinkle streusel topping over the loaf.
- Bake for 50–60 minutes, or until a toothpick inserted into the cake part comes out clean.
- If browning too quickly, cover with foil during the last 15 minutes.
- Let loaf cool in the pan for 15 minutes, then transfer to a wire rack.
- Whisk glaze ingredients and drizzle over cooled bread. Slice and enjoy!
