Description
A creamy and delicious beef tortellini skillet dish that’s perfect for a quick weeknight dinner.
Ingredients
Scale
- 1 lb (450 g) beef sirloin or steak, cut into bite-sized cubes
- 2 tbsp olive oil (divided)
- Salt & black pepper, to taste
- 2 cloves garlic, minced
- 1 ½ cups heavy cream
- 1 cup beef broth
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ¼ tsp red pepper flakes (optional)
- 1 (20 oz) package refrigerated cheese tortellini
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Heat 1 tbsp olive oil in a large skillet over medium-high heat. Season beef cubes with salt and pepper. Sear beef 2–3 minutes per side until browned but still tender. Remove and set aside.
- In the same skillet, add remaining olive oil and garlic; sauté 30 seconds until fragrant. Pour in beef broth and heavy cream. Simmer gently. Stir in Parmesan, Italian seasoning, and red pepper flakes. Cook until slightly thickened (3–4 minutes).
- Add tortellini directly into the skillet. Simmer in the sauce for 5–6 minutes (or until pasta is tender and cooked through).
- Return seared beef to skillet, tossing to coat in the creamy sauce. Cook 1–2 minutes more until warmed through. Garnish with fresh parsley and extra Parmesan.
Notes
- For a spicier dish, increase the amount of red pepper flakes.
- Feel free to add vegetables like spinach or mushrooms for added nutrition.
- This dish can be made ahead and reheated, but the tortellini may absorb some sauce.
