- 2 cups corn kernels (fresh, frozen, or canned and drained)
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1/4 cup mayonnaise
- 1/4 cup green onions, sliced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and black pepper, to taste
- Optional: diced jalapeño or red bell pepper
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a small baking dish.
- In a large bowl, mix cream cheese, sour cream, and mayonnaise until smooth.
- Add corn, cheddar cheese, green onions, garlic powder, paprika, salt, and black pepper.
- Stir until evenly combined.
- Spread mixture into the prepared baking dish.
- Bake for 20–25 minutes until hot, bubbly, and lightly golden.
- Let cool slightly before serving.

- This dish can be served as a side or as a dip with tortilla chips.
- For an added kick, include diced jalapeño or bell pepper.
