Description

A delicious creamy pasta dish made with cottage cheese and fresh basil.


Ingredients

  • 1 cup small curd cottage cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves
  • 8 ounces pasta of your choice (spaghetti, penne, or fettuccine)
  • Salt to taste

Instructions

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Save some pasta water for later.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1-2 minutes). Be careful not to burn it.
  3. In a blender or food processor, combine cottage cheese, sautéed garlic, grated Parmesan, basil leaves, and salt. Blend until smooth.
  4. Drain the cooked pasta and add it to the skillet with the garlic oil. Pour in the blended cottage cheese sauce and mix well until coated.
  5. Adjust the sauce consistency by adding reserved pasta water as needed.
  6. Serve immediately, garnished with extra basil and Parmesan.
