A delicious creamy pasta dish made with cottage cheese and fresh basil.
Ingredients

- 1 cup small curd cottage cheese
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil leaves
- 8 ounces pasta of your choice (spaghetti, penne, or fettuccine)
- Salt to taste
Instructions
- Cook the pasta according to package instructions in salted boiling water until al dente. Save some pasta water for later.
- In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1-2 minutes). Be careful not to burn it.
- In a blender or food processor, combine cottage cheese, sautéed garlic, grated Parmesan, basil leaves, and salt. Blend until smooth.
- Drain the cooked pasta and add it to the skillet with the garlic oil. Pour in the blended cottage cheese sauce and mix well until coated.
- Adjust the sauce consistency by adding reserved pasta water as needed.
- Serve immediately, garnished with extra basil and Parmesan.
