  • 1 cup glutinous rice flour (Mochiko)
  • ¼ cup sugar
  • 1 cup milk (or coconut milk for extra creaminess)
  • 2 tbsp unsalted butter, melted
  • For Coating:
  • 1 cup crushed vanilla cookies, shortbread, or graham crackers

Instructions

  1. Make the Custard Filling: In a saucepan, whisk egg yolks, sugar, and cornstarch until smooth. Gradually whisk in milk and cook over medium heat, stirring constantly, until thickened. Remove from heat, stir in butter and vanilla, then transfer to a bowl. Cover with plastic wrap (touching the surface) and chill until firm. Once set, scoop into small teaspoon-sized balls and freeze until solid (this makes wrapping easier).
  2. Make the Mochi Dough: In a heatproof bowl, mix glutinous rice flour, sugar, and milk until smooth. Microwave (or steam) in 1-minute intervals, stirring in between, until the dough is thick, sticky, and translucent (about 3–4 minutes). Stir in melted butter. Let cool slightly.
  3. Assemble the Mochi Balls: Dust hands and surface with cornstarch. Divide mochi dough into small portions. Flatten each into a disc. Place a frozen custard ball in the center, wrap the dough around, and pinch to seal. Roll gently into a smooth ball.
  4. Coat & Finish: Roll each mochi ball in crushed cookies until fully coated. Place in mini cupcake liners if desired.
  5. Serve: Chill for 20–30 minutes, then enjoy! The outside will be chewy, the inside creamy, and the coating crunchy.
