Ingredients
Scale
- 1.5 lb (700g) salmon fillets, cut into bite-size chunks
- 1 tbsp olive oil
- 2 tbsp butter
- 1 tsp garlic powder
- 1 tsp paprika
- Salt & pepper to taste
- Optional: red chili flakes (for heat)
- 10 oz (280g) fettuccine or linguine
- 3 tbsp butter
- 4 cloves garlic, minced
- 1 cup (240 ml) heavy cream
- 1/3 cup (30g) grated Parmesan cheese
- 1/2 cup (120 ml) chicken broth OR pasta cooking water
- 1 tsp Italian seasoning
- Salt & pepper to taste
- Juice of 1/2 lemon
- Fresh parsley (finely chopped)
Instructions
- Boil pasta in salted water according to package instructions. Reserve 1/2 cup of the pasta water, then drain and set aside.
- Pat salmon dry and season with salt, pepper, garlic powder, paprika. Heat olive oil + butter in a large pan over medium-high heat. Add salmon pieces and sear 2–3 minutes per side until golden. Remove salmon from the pan and set aside (do not overcook).
- In the same pan, melt 3 tbsp butter. Add minced garlic and sauté 30 seconds (don’t brown it). Pour in heavy cream + chicken broth/pasta water. Add Parmesan + Italian seasoning + salt & pepper. Stir and simmer on low 2–3 minutes until slightly thickened. Add lemon juice — stir in gently.
- Add pasta to the sauce and toss to coat. Gently add the cooked salmon back in. Spoon sauce over everything. Sprinkle fresh parsley + red chili flakes if desired. Serve immediately while hot and creamy.
Notes
- For a spicier kick, add more red chili flakes.
- Ensure not to overcook the salmon for a tender texture.
- Fresh parsley adds a nice touch of color and flavor.
