- 1 lb (450 g) ground beef (or half beef + half pork for juicier meatballs)
- 1 small onion, finely grated
- 2 cloves garlic, minced
- ½ cup breadcrumbs
- 1 large egg
- 2 tbsp fresh parsley, chopped
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
- 2 tbsp olive oil or butter (for frying)
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 8 oz (225 g) mushrooms, sliced (button or cremini work best)
- 3 cloves garlic, minced
- 1 cup heavy cream (or half-and-half)
- ½ cup chicken or beef broth
- ½ tsp dried thyme (or fresh thyme sprigs)
- ½ cup grated Parmesan cheese
- Salt & pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a bowl, mix ground meat, onion, garlic, breadcrumbs, egg, parsley, salt, pepper, and paprika until combined.
- Shape into golf ball–sized meatballs (about 14–16).
- Heat olive oil in a large skillet over medium heat.
- Fry meatballs until browned on all sides (about 5–6 minutes).
- Remove and set aside (they will finish cooking in the sauce).
- In the same skillet, melt butter and add olive oil.
- Sauté mushrooms until golden and softened (5–6 minutes).
- Stir in garlic and thyme; cook 1 minute until fragrant.
- Pour in broth and simmer 2 minutes to reduce slightly.
- Stir in cream and Parmesan; simmer until thickened (3–4 minutes).
- Return meatballs to the skillet.
- Simmer 8–10 minutes, spooning sauce over them, until fully cooked through (internal temp 165°F / 74°C).
- Sprinkle with fresh parsley.
- Serve with mashed potatoes, rice, or pasta.
