Ingredients

  • 1 lb (450 g) ground beef (or half beef + half pork for juicier meatballs)
  • 1 small onion, finely grated
  • 2 cloves garlic, minced
  • ½ cup breadcrumbs
  • 1 large egg
  • 2 tbsp fresh parsley, chopped
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • 2 tbsp olive oil or butter (for frying)
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 8 oz (225 g) mushrooms, sliced (button or cremini work best)
  • 3 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half)
  • ½ cup chicken or beef broth
  • ½ tsp dried thyme (or fresh thyme sprigs)
  • ½ cup grated Parmesan cheese
  • Salt & pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, mix ground meat, onion, garlic, breadcrumbs, egg, parsley, salt, pepper, and paprika until combined.
  2. Shape into golf ball–sized meatballs (about 14–16).
  3. Heat olive oil in a large skillet over medium heat.
  4. Fry meatballs until browned on all sides (about 5–6 minutes).
  5. Remove and set aside (they will finish cooking in the sauce).
  6. In the same skillet, melt butter and add olive oil.
  7. Sauté mushrooms until golden and softened (5–6 minutes).
  8. Stir in garlic and thyme; cook 1 minute until fragrant.
  9. Pour in broth and simmer 2 minutes to reduce slightly.
  10. Stir in cream and Parmesan; simmer until thickened (3–4 minutes).
  11. Return meatballs to the skillet.
  12. Simmer 8–10 minutes, spooning sauce over them, until fully cooked through (internal temp 165°F / 74°C).
  13. Sprinkle with fresh parsley.
  14. Serve with mashed potatoes, rice, or pasta.
