Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 3 cloves fresh minced garlic
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil

Instructions

  1. Start by seasoning your chicken breasts with salt, pepper, and Italian seasoning.
  2. In a large skillet, heat a tablespoon of olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side, until they’re golden brown and cooked through. Remove them from the skillet and set aside.
  3. In the same skillet, lower the heat to medium and add a little more oil if needed. Toss in the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it!
  4. Stir in the rice and toast it for a minute, then pour in the chicken broth. Bring to a gentle boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the rice is tender and has absorbed most of the liquid.
  5. Once the rice is ready, return the chicken to the skillet. Stir in the heavy cream and Parmesan cheese, mixing well to combine everything. Let it simmer for another 3-5 minutes until the sauce thickens.
  6. Garnish with fresh parsley if desired and serve hot.
