Ingredients

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • 3 tbsp butter (for Alfredo sauce)
  • 4 cloves garlic, minced (for Alfredo sauce)
  • 1 ½ cups (360 ml) heavy cream
  • ¾ cup (75 g) freshly grated Parmesan cheese
  • ½ cup (120 ml) whole milk (optional, to thin sauce)
  • ½ tsp Italian seasoning
  • Salt and pepper, to taste (for Alfredo sauce)
  • 1 tbsp chopped parsley (for garnish)
  • 12 oz (340 g) fettuccine (or linguine/spaghetti)
  • Salt for boiling water

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente. Drain and set aside (reserve ½ cup pasta water).
  2. In a large skillet, heat olive oil and butter over medium heat. Add garlic and sauté until fragrant (about 30 seconds). Add shrimp, paprika, salt, and pepper. Cook 1–2 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
  3. In the same skillet, melt 3 tbsp butter. Add garlic and sauté until fragrant. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth. Season with Italian herbs, salt, and pepper. If sauce is too thick, add milk or pasta water a little at a time until desired consistency.
  4. Add cooked pasta to the sauce and toss to coat evenly. Return the shrimp to the skillet and mix gently. Simmer for 1–2 minutes until heated through.
  5. Garnish with fresh parsley and extra Parmesan. Serve immediately — best enjoyed warm and creamy!

Notes

  • For a spicier kick, add red pepper flakes to the shrimp.
  • Feel free to substitute shrimp with chicken or vegetables for a different variation.
