Description

A delicious and creamy dish featuring chicken thighs cooked in a rich herb sauce, served over egg noodles.


Ingredients

  • 6 bone-in or boneless chicken thighs
  • 1 ½ tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 4 garlic cloves, minced
  • 1 small onion, finely chopped (optional)
  • 1 tbsp flour (to thicken)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tsp Dijon mustard
  • 1 tsp dried thyme
  • 1 tsp dried parsley (plus more for garnish)
  • ½ tsp dried basil
  • Salt & pepper to taste
  • Optional: squeeze of lemon for brightness
  • 12 oz (350 g) egg noodles
  • Salt for boiling
  • 1 tbsp butter (optional)

Instructions

  1. Prepare & Sear the Chicken: Pat chicken thighs dry. Season both sides with salt, pepper, garlic powder, and onion powder. Heat olive oil and butter in a large skillet over medium-high. Sear chicken for 6–7 minutes per side until deep golden brown. Remove chicken and set aside.
  2. Build the Creamy Herb Sauce: In the same skillet, add garlic (and onion if using). Sauté for 1 minute until fragrant. Sprinkle the flour and stir for 30 seconds. Pour in chicken broth and whisk to dissolve browned bits. Add heavy cream, Parmesan, Dijon, thyme, parsley, and basil. Simmer for 3–4 minutes until slightly thickened.
  3. Combine & Simmer: Place chicken thighs back into the sauce. Spoon sauce over the top. Cover and simmer for 10–15 minutes until chicken is cooked through and tender. Taste and adjust salt, pepper, and herbs. Optional: add a squeeze of lemon for brightness.
  4. Cook the Egg Noodles: Boil noodles in salted water until tender. Drain and toss with 1 tbsp butter.
  5. Serve: Add a bed of warm egg noodles to each plate. Top with a chicken thigh or two and spoon plenty of creamy herb sauce over the top. Sprinkle with fresh parsley.
