Description
Creamy Lemon Delight Cups are a refreshing summer treat made with fresh lemons and a creamy filling, perfect for warm weather.
Ingredients
Scale
- 6–8 large lemons
- Fresh mint leaves (for garnish)
- Edible flowers (optional, for decoration)
- 1 cup heavy cream (well chilled)
- ½ cup sweetened condensed milk
- ½ cup lemon juice (freshly squeezed)
- Zest of 1 lemon
- 1 tsp vanilla extract
Instructions
- Cut lemons in half lengthwise.
- Carefully scoop out the pulp with a spoon or citrus reamer (save juice for filling). Pat the inside dry with a paper towel. Chill in fridge until ready to fill.
- In a bowl, whip the chilled heavy cream until soft peaks form. Gently fold in condensed milk, lemon juice, zest, and vanilla. Whip again briefly until smooth and slightly thickened.
- Spoon or pipe the creamy mixture into the prepared lemon cups. Refrigerate at least 2 hours (or freeze for 30–40 minutes for a firmer mousse-like texture).
- Top with fresh mint leaves and edible flowers. Serve chilled for a refreshing, tangy treat.
Notes
- For a firmer texture, freeze the cups for a shorter time.
- Use organic lemons for the best flavor and to avoid pesticides.
- Feel free to adjust the sweetness by adding more or less condensed milk.
