Instructions

  1. Cut lemons in half lengthwise.
  2. Carefully scoop out the pulp with a spoon or citrus reamer (save juice for filling). Pat the inside dry with a paper towel. Chill in fridge until ready to fill.
  3. In a bowl, whip the chilled heavy cream until soft peaks form. Gently fold in condensed milk, lemon juice, zest, and vanilla. Whip again briefly until smooth and slightly thickened.
  4. Spoon or pipe the creamy mixture into the prepared lemon cups. Refrigerate at least 2 hours (or freeze for 30–40 minutes for a firmer mousse-like texture).
