Ingredients

- 2 shallots, finely chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream (or half-and-half)
- 2 tsp fresh thyme leaves
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat; sauté shallots and garlic until fragrant.
- Add mushrooms; cook until tender and browned.
- Pour in vegetable broth; bring to a gentle simmer for about 10 minutes.
- Stir in heavy cream, thyme, salt, and pepper; simmer for another 10 minutes.
- Blend the mixture until smooth using an immersion blender or countertop blender.
- Adjust seasoning if necessary; serve hot with optional garnishes like extra thyme or sautéed mushrooms.
Notes
- For a vegan option, substitute heavy cream with coconut cream or a plant-based alternative.
- Garnish with extra sautéed mushrooms for added flavor.
