- 1 (9 oz) package cheese tortellini (fresh or frozen)
- 1 lb large shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tbsp butter
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp paprika (optional, for color)
- 2 tbsp butter (for Alfredo sauce)
- 3 cloves garlic, minced
- 1 cup heavy cream
- ¾ cup grated Parmesan cheese
- ½ cup cream cheese (softened, for extra creaminess)
- ¼ tsp salt (for Alfredo sauce)
- ¼ tsp black pepper (for Alfredo sauce)
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook tortellini according to package directions until al dente. Drain and set aside, tossing lightly with a drizzle of olive oil to prevent sticking.
- Pat shrimp dry with paper towels and season with salt, pepper, garlic powder, and paprika. Heat olive oil and butter in a large skillet over medium-high heat. Add shrimp in a single layer and cook for 1–2 minutes per side, until pink and lightly browned. Remove shrimp from skillet and set aside.
- In the same skillet, reduce heat to medium. Add 2 tbsp butter and minced garlic; sauté 30 seconds until fragrant. Pour in heavy cream, stirring to combine. Bring to a gentle simmer. Add Parmesan and cream cheese, whisking until melted and smooth. Season with salt and pepper to taste.
- Add cooked tortellini to the sauce, stirring until evenly coated. Gently fold in seared shrimp. Cook for 2–3 minutes over low heat to let flavors meld.
- Sprinkle with fresh parsley and extra Parmesan. Serve warm with garlic bread or a crisp green salad.
Notes
- For a spicier version, add red pepper flakes to the shrimp seasoning.
- Feel free to substitute shrimp with chicken or vegetables for a different variation.
