Description

This creamy garlic chicken is packed with flavor from sun-dried tomatoes, garlic, and fresh spinach, making it a delightful meal for any occasion.


Ingredients

  • 2 large boneless, skinless chicken breasts (about 1 lb total)
  • Salt and black pepper, to taste
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 34 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes in oil, drained and chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups baby spinach
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Extra salt and pepper to taste

Instructions

  1. Pat the chicken breasts dry and season both sides with salt, pepper, and garlic powder.
  2. Heat the olive oil and butter in a large skillet over medium-high heat, then sear the chicken for 4–5 minutes per side until golden brown and cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. Add minced garlic to the same skillet and sauté for 30 seconds until fragrant.
  5. Add the chopped sun-dried tomatoes and cook for another minute.
  6. Pour in chicken broth to deglaze the pan and scrape up any browned bits.
  7. Add heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes and let it simmer for 2–3 minutes until slightly thickened.
  8. Add baby spinach and cook until wilted, about 1 minute.
  9. Return the chicken to the skillet, spooning sauce over the top, and simmer for another 3–4 minutes.
  10. Adjust seasoning and serve warm over pasta, mashed potatoes, or rice.

Notes

  • This dish pairs wonderfully with a side of garlic bread or a fresh salad.
  • For a lighter version, you can use half-and-half instead of heavy cream.
