Ingredients

  • 2 large onions (yellow or sweet, cut into thick rings)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • ½ cup regular breadcrumbs
  • ½ cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper (optional, for heat)
  • Salt & black pepper, to taste
  • Cooking spray or olive oil

Instructions

  1. Peel onions and slice into thick rings.
  2. Separate into individual rings.
  3. In Bowl 1, season flour with salt and pepper.
  4. In Bowl 2, place beaten eggs.
  5. In Bowl 3, mix panko, regular breadcrumbs, parmesan, garlic powder, paprika, cayenne, salt, and pepper.
  6. Dip each onion ring into flour, shaking off excess.
  7. Dip into beaten eggs.
  8. Coat thoroughly in the breadcrumb mixture, pressing lightly to stick.
  9. Preheat oven to 220°C (425°F).
  10. Line a baking tray with parchment paper and lightly spray with cooking spray.
  11. Arrange onion rings in a single layer.
  12. Spray or drizzle lightly with olive oil.
  13. Bake for 15–20 minutes, flipping halfway, until golden brown and crispy.
  14. Enjoy hot with ketchup, spicy mayo, or ranch dip.

  • For extra crunch, use a mix of panko and regular breadcrumbs.
