Description
Crispy on the outside and tender inside, these Brussels sprouts are roasted with smoky bacon and finished in a luscious maple glaze. The combination of caramelized edges, salty bacon, and sweet maple syrup makes this dish irresistible — perfect for holidays, weeknight dinners, or when you need a quick gourmet side.

- 1 ½ lbs (680 g) Brussels sprouts, trimmed and halved
- 6 slices thick-cut bacon, chopped
- 2 tbsp olive oil
- Salt and pepper, to taste
- 3 tbsp pure maple syrup
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tbsp soy sauce or tamari
- 1 tsp garlic powder
- Optional: pinch of red pepper flakes for a spicy kick
Instructions
- Preheat oven to 400°F (200°C).
- Rinse and trim Brussels sprouts, cutting large ones in half. Toss them in a bowl with olive oil, salt, and pepper until evenly coated.
- In a large oven-safe skillet or baking sheet, arrange chopped bacon and Brussels sprouts together. Roast for 25–30 minutes, stirring halfway, until the sprouts are golden and crispy and bacon is rendered.
- While the sprouts roast, whisk maple syrup, Dijon mustard, vinegar, soy sauce, and garlic powder in a small saucepan. Bring to a simmer over medium heat and cook for 2–3 minutes, until slightly thickened.
- Remove roasted Brussels sprouts and bacon from the oven. Drizzle the warm maple glaze over them and toss gently to coat. Return to the oven for 5 more minutes to caramelize the glaze.
- Transfer to a serving bowl and garnish with extra bacon bits or chopped parsley. Serve hot as a side for roast chicken, steak, or holiday meals.
