- 1 pint vanilla ice cream (or your favorite flavor)
- 2 cups cornflakes, crushed (or panko breadcrumbs)
- ½ cup sweetened shredded coconut (optional)
- 2 tbsp sugar + 1 tsp cinnamon (for coating)
- 2 large eggs, beaten
- Oil for deep frying
- Whipped cream
- Chocolate sauce (or hot fudge)
- Caramel sauce (optional)
- Chopped nuts (peanuts, almonds, or pecans)
Instructions
- Scoop ice cream into large, firm balls (about the size of a tennis ball).
- Place on a tray and freeze until rock solid (at least 2–3 hours, or overnight).
- Mix crushed cornflakes, coconut, sugar, and cinnamon in a shallow bowl.
- Roll ice cream balls quickly in the coating, then dip in beaten eggs, then coat again with more crumbs. Repeat for extra crunch.
- Return to freezer for at least 1 hour.
- Heat oil in a deep pot to 190°C (375°F).
- Working one at a time, fry ice cream balls for 10–15 seconds until golden and crisp. Immediately remove and drain on paper towels.
- Place fried ice cream ball in a bowl.
- Top with whipped cream, drizzle with chocolate sauce (and caramel if using), and sprinkle with nuts.
Notes
- Ensure the ice cream balls are very firm before frying to prevent melting.
- Experiment with different ice cream flavors for variety.
- For a healthier option, consider using less sugar or alternative toppings.
