- 1 ½ tsp baking powder
- ½ tsp baking soda
- 1 tsp salt
- ½ tsp sugar
- ¼ tsp cayenne pepper (optional, for a kick)
- ½ cup finely chopped onion (or green onion)
- 1 large egg
- ¾ cup buttermilk (or milk with 1 tsp lemon juice)
- 1 Tbsp melted butter or bacon drippings
- Vegetable oil, for frying
Instructions
- In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt, sugar, and cayenne.
- Stir in the chopped onion.
- In a separate bowl, whisk the egg, buttermilk, and melted butter.
- Pour into the dry mix and stir just until combined (batter should be thick but scoopable).
- In a deep skillet or Dutch oven, heat 2–3 inches of vegetable oil to 350°F (175°C).
- Drop spoonfuls (about 1 Tbsp each) of batter into the hot oil.
- Fry 2–3 minutes per side, until golden brown and crispy. Don’t overcrowd the pan.
- Remove with a slotted spoon and drain on paper towels.
- Serve hot with honey butter, tartar sauce, or alongside fried fish.
