Ingredients

  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying (vegetable or canola)

Instructions

  1. If you don’t have leftover mashed potatoes, make a fresh batch. Allow them to cool completely.
  2. In a large bowl, combine the cooled mashed potatoes, shredded cheese, egg, flour, garlic powder, onion powder, salt, and pepper. Stir until fully mixed.
  3. Using your hands, take a small portion of the mixture and form it into a ball or small patty shape. Aim for about one inch in diameter.
  4. In a large pot or deep pan, heat enough oil for frying (about 2 inches deep) over medium-high heat. Ensure the oil is hot before frying.
  5. Carefully place several potato puffs into the hot oil, making sure not to overcrowd the pot. Fry until they’re golden brown, about 3-4 minutes on each side.
  6. Once cooked, use a slotted spoon to remove the puffs from the oil, placing them on paper towels to absorb excess oil.
  7. Continue the process until all the mixture is cooked.
  8. These cheese puffs are best served warm for the ultimate crispy texture.
