- 2 cups mashed potatoes (prepared and cooled)
- 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
- 1 large egg
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese (optional)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Oil for frying (vegetable or canola)
Instructions
- If you don’t have leftover mashed potatoes, make a fresh batch. Allow them to cool completely.
- In a large bowl, combine the cooled mashed potatoes, shredded cheese, egg, flour, garlic powder, onion powder, salt, and pepper. Stir until fully mixed.
- Using your hands, take a small portion of the mixture and form it into a ball or small patty shape. Aim for about one inch in diameter.
- In a large pot or deep pan, heat enough oil for frying (about 2 inches deep) over medium-high heat. Ensure the oil is hot before frying.
- Carefully place several potato puffs into the hot oil, making sure not to overcrowd the pot. Fry until they’re golden brown, about 3-4 minutes on each side.
- Once cooked, use a slotted spoon to remove the puffs from the oil, placing them on paper towels to absorb excess oil.
- Continue the process until all the mixture is cooked.
- These cheese puffs are best served warm for the ultimate crispy texture.
