Description

Crispy Parmesan Crusted Smashed Potatoes are irresistible bites that combine the creaminess of potatoes with a crunchy, cheesy crust.

Ingredients

Scale
  • 1 ½ lbs (700 g) baby potatoes or small Yukon gold potatoes
  • 2 tbsp salt (for boiling water)
  • 3 tbsp olive oil
  • 3 tbsp melted butter
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & black pepper, to taste
  • ½ cup (50 g) grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (or 1 tsp dried)
  • ½ cup mayonnaise (optional)
  • 2 tbsp sriracha (or hot sauce, optional)
  • 1 tsp lemon juice (optional)

Instructions

  1. Boil the potatoes: Place the potatoes in a large pot, cover with cold water, and add salt. Bring to a boil and cook until fork-tender (about 15–20 minutes). Drain and let cool for 5 minutes.
  2. Smash and season: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it. Place potatoes on the sheet and gently smash each one with the bottom of a glass or a potato masher — flatten them but don’t break them apart. Mix olive oil, melted butter, garlic powder, paprika, salt, and pepper, then drizzle over the potatoes.
  3. Add the crust and bake: Sprinkle Parmesan cheese evenly over the top of each smashed potato. Bake for 25–30 minutes, or until golden brown and crisp around the edges. For extra crunch, broil for 2–3 minutes at the end.
  4. Serve: Sprinkle with fresh parsley before serving. Serve hot with the spicy mayo dipping sauce or your favorite dip (garlic aioli or ranch work great too).

Notes

  • For a spicier kick, adjust the amount of sriracha in the dipping sauce.
  • These potatoes can be made ahead of time and reheated in the oven for a crispy finish.
  • Feel free to experiment with different herbs and spices for added flavor.
