- ½ cup panko breadcrumbs
- ½ cup all-purpose flour
- 2 large eggs
- 2 tbsp coconut milk (or regular milk)
- 2 tbsp rum (optional, for the piña colada flavor)
- 2 tbsp sugar (optional, for extra sweetness)
- Oil for frying (vegetable or coconut oil)
- Extra toasted coconut flakes (for garnish)
- Powdered sugar (optional, for garnish)
- Small cocktail umbrellas (for tropical vibes)
Instructions
- In one bowl: place flour.
- In a second bowl: whisk eggs, coconut milk, and rum.
- In a third bowl: mix shredded coconut, panko, and sugar.
- Pat pineapple rings dry with paper towels.
- Dredge each ring in flour → dip in egg wash → coat with coconut-panko mixture. Press gently to help coating stick.
- Heat oil in a deep pan to 350°F (175°C).
- Fry pineapple rings 1–2 minutes per side until golden brown. Remove and drain on paper towels.
- Sprinkle with extra toasted coconut or powdered sugar. Serve warm with vanilla ice cream, caramel drizzle, or a splash of rum sauce.
