Description

Delicious and crispy potato muffins made with seasoned russet potatoes and baked to perfection.


Ingredients

  • 4 large russet potatoes
  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Fresh chives (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the potatoes thoroughly, then slice them thinly (about 1/8-inch thick) using a mandoline or sharp knife.
  3. In a mixing bowl, combine potato slices with olive oil, salt, black pepper, garlic powder, onion powder, and smoked paprika. Toss well to coat evenly.
  4. Lightly grease each muffin cup in a muffin tin. Stack the seasoned potato slices in each cup, overlapping slightly.
  5. Bake for 25-30 minutes until crispy and golden brown.
  6. Allow to cool for a few minutes before removing from the muffin tin. Garnish with freshly chopped chives and serve warm.
