- 1 pound large shrimp, peeled and deveined (tails removed)
- 1 package instant ramen noodles (any flavor, discard seasoning packet)
- ½ cup flour
- 2 large eggs, beaten
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon cayenne pepper (optional, for extra heat)
- Salt and black pepper, to taste
- Oil, for frying
- 2 cups shredded green cabbage
- 1 cup shredded purple cabbage
- ½ cup shredded carrots
- ¼ cup corn kernels (optional)
- 3 tablespoons mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon honey or sugar
- ½ teaspoon chili flakes or sriracha (for spice)
- Salt and pepper, to taste
- 8 small taco shells (hard or soft, warmed)
- Sweet chili sauce or spicy mayo drizzle
- Fresh lime wedges
- Chopped green onions or cilantro for garnish
Instructions
- In a mixing bowl, combine cabbage, carrots, corn, mayonnaise, lime juice, honey, chili flakes or sriracha, salt, and pepper. Mix well, cover, and refrigerate until ready to serve.
- Place ramen noodles in a food processor or in a zip-top bag and crush into coarse crumbs. Mix with smoked paprika, garlic powder, cayenne, salt, and pepper.
- Pat shrimp dry with paper towels. Dredge each shrimp in flour, dip in beaten eggs, then press into crushed ramen until fully coated.
- Heat oil in a deep skillet to 350°F (175°C). Fry shrimp in batches for 2–3 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate.
- Fill each taco shell with a layer of slaw. Top with crispy ramen-crusted shrimp. Drizzle with sweet chili sauce or spicy mayo. Garnish with green onions or cilantro. Serve immediately with lime wedges.
Notes
- For extra heat, increase the amount of cayenne pepper or add more chili flakes.
- Feel free to customize the slaw with additional vegetables like bell peppers or radishes.
