Crispy Shrimp Toast Bites are a delightful treat made with shrimp and bread, perfect for appetizers or snacks.

- 6–8 slices of thick white bread (or milk bread/brioche, crusts removed)
- 12–15 medium shrimp (peeled & deveined)
- 1 egg (for binding)
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tbsp soy sauce
- ½ tsp sesame oil
- ½ tsp salt
- ¼ tsp white pepper
- 1 tbsp chopped chives or green onions
- Neutral oil for deep-frying
Instructions
- Cut the bread into cubes (about 2-inch squares). Use your fingers or a spoon to press down the center, making a small cavity for the shrimp.
- Roughly chop half of the shrimp into a paste. Leave the other half whole or halved for topping. In a bowl, mix shrimp paste with garlic, ginger, soy sauce, sesame oil, salt, pepper, and egg. Stir until sticky.
- Fill each bread cube cavity with 1 spoonful of shrimp paste. Press a whole (or halved) shrimp on top, gently pressing it into the filling. Sprinkle with chopped chives.
- Heat oil in a deep pan to 170°C (340°F). Fry cubes shrimp-side up first for 1–2 minutes, then flip and fry until golden brown on all sides (about 3–4 minutes total). Drain on paper towels.
- Arrange on a platter and serve hot with dipping sauces.

- Ensure the oil is hot enough before frying to achieve a crispy texture.
- Experiment with different dipping sauces for variety.
- These bites can be made ahead of time and reheated in the oven for serving.
