Instructions

  1. In a large bowl, combine the beef cubes with olive oil, salt, black pepper, dried thyme, dried rosemary, and paprika. Toss well until every cube is evenly coated in the aromatic spice blend.
  2. Heat a skillet over medium-high heat and sear the seasoned beef cubes in batches, browning all sides. This step locks in juices and adds caramelized flavor. (Optional: skip if short on time)
  3. Transfer the browned beef cubes into your crockpot, creating an even layer at the bottom.
  4. In the same skillet, add the minced garlic to the melted butter and cook over low heat for 1-2 minutes, stirring constantly until the garlic is fragrant but not browned.
  5. Pour the garlic butter mixture over the beef in the crockpot, ensuring every piece is bathed in the luscious sauce.
  6. Add the halved baby potatoes around and on top of the beef, distributing them evenly so they absorb the buttery juices.
  7. Pour the beef broth over the potatoes and beef, allowing the liquid to pool at the bottom for even cooking.
  8. Stir gently with a large spoon to combine ingredients without crushing the potatoes.
  9. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and potatoes are cooked through.
  10. Let rest for 10 minutes after cooking. Taste and adjust seasoning with salt and pepper if needed. Garnish with fresh parsley before serving, if desired.
