- 3 tbsp mayonnaise
- 1 tbsp Greek yogurt (optional for extra creaminess)
- 1 tsp Dijon mustard
- 1 tbsp finely chopped celery
- 1 tbsp finely chopped green onion
- 1 tsp lemon juice
- Salt & pepper to taste
- Optional add-ins: 1 tbsp finely chopped pickles, 1 tsp chopped dill, a pinch of garlic powder
- 1 large English cucumber (or 2 small)
- Sesame seeds or everything bagel seasoning for topping
Instructions
- Make the Chicken Salad: In a bowl, mix together the mayonnaise, Greek yogurt, mustard, lemon juice, salt, and pepper. Add the chicken, celery, and green onion. Stir until well combined and creamy. Taste and adjust seasoning (more lemon, salt, or a pinch of garlic powder if you like).
- Prepare the Cucumber Rounds: Slice the cucumbers into thick rounds (about 1.2–1.5 cm / ½ inch). Pat them dry with a paper towel to prevent slipping.
- Assemble the Bites: Place one cucumber slice as a base. Spoon on a generous mound of chicken salad. Top with another cucumber slice. Sprinkle sesame seeds or seasoning on top.
Notes
- For a spicier kick, consider adding a dash of hot sauce to the chicken salad.
- These bites are best served fresh but can be prepared in advance; just keep the cucumber and chicken salad separate until ready to serve.
