- 1 loaf Fresh Baguette Bread (Or substitute with brown bread or white sandwich bread)
- 2 tablespoons Extra Virgin Olive Oil (Essential for toasting)
- 2 cups Ripened Tomatoes (Finely chopped)
- 2 cloves Garlic (Minced)
- 1/4 cup Fresh Basil Leaves (Chopped)
- 1 tablespoon Balsamic Vinegar (High quality)
- to taste Salt & Pepper
- 1 cup Goat Cheese (Can be swapped with cream cheese)
- 1/4 cup Parmesan Cheese (Freshly grated)
Instructions
- Preheat the oven to 400°F (220°C).
- Cut the baguette into heart shapes using a heart-shaped cookie cutter.
- Brush both sides of the heart-shaped bread with extra virgin olive oil. Bake for about 10 minutes until golden brown.
- Spread a layer of goat cheese over each toasted heart.
- Mix together the chopped tomatoes, minced garlic, chopped basil, balsamic vinegar, olive oil, salt, and pepper.
- Spoon the tomato-basil mixture evenly over the cheese-topped hearts.
- Grate fresh Parmesan cheese over the top just before serving.
