Ingredients

- 2 cups full-fat coconut milk
- 2 inches ginger, sliced
- 1 teaspoon ground turmeric
- 1 cinnamon stick
- 4 cardamom pods, crushed
- 5 whole cloves
- 1 star anise
- 1 teaspoon vanilla extract
- Honey or maple syrup, to taste
Instructions
- In a small saucepan, combine the coconut milk, ginger, turmeric, cinnamon stick, cardamom, cloves, and star anise.
- Bring to a simmer over medium heat and simmer for 10 minutes, stirring occasionally.
- Remove from heat and stir in the vanilla extract.
- Strain the mixture through a fine-mesh sieve to remove the spices and ginger.
- Sweeten with honey or maple syrup, to taste.
- Serve warm and enjoy!
