  • Pinch of salt
  • ½ cup orange juice (strained) (for gelée topping)
  • 2 tbsp sugar (for gelée topping)
  • 1 tsp gelatin powder (or agar-agar for vegetarian option)
  • Extra sugar for rolling

Instructions

  1. Melt dark chocolate using a double boiler or microwave in short bursts.
  2. Brush or spoon a thin layer into silicone molds, ensuring sides are coated.
  3. Chill for 10 minutes, then repeat with a second coat for sturdiness.
  4. In a saucepan, combine sugar and water over medium heat. Cook without stirring until amber-colored.
  5. Slowly whisk in warm cream (be careful, it will bubble).
  6. Stir in butter, orange zest, orange juice, and salt.
  7. Let cool slightly until thick but pourable.
  8. Spoon cooled caramel into chocolate shells, leaving space at the top.
  9. Cover with melted chocolate to seal. Chill until set.
  10. Heat orange juice and sugar until dissolved.
  11. Stir in gelatin until smooth. Pour into a shallow dish and refrigerate until firm.
