- 1 cup granulated sugar
- ¼ cup water
- ½ cup heavy cream (warm)
- 3 tbsp unsalted butter
- 1 tbsp orange zest
- 2 tbsp orange juice (fresh)
- Pinch of salt
- ½ cup orange juice (strained) (for gelée topping)
- 2 tbsp sugar (for gelée topping)
- 1 tsp gelatin powder (or agar-agar for vegetarian option)
- Extra sugar for rolling
Instructions
- Melt dark chocolate using a double boiler or microwave in short bursts.
- Brush or spoon a thin layer into silicone molds, ensuring sides are coated.
- Chill for 10 minutes, then repeat with a second coat for sturdiness.
- In a saucepan, combine sugar and water over medium heat. Cook without stirring until amber-colored.
- Slowly whisk in warm cream (be careful, it will bubble).
- Stir in butter, orange zest, orange juice, and salt.
- Let cool slightly until thick but pourable.
- Spoon cooled caramel into chocolate shells, leaving space at the top.
- Cover with melted chocolate to seal. Chill until set.
- Heat orange juice and sugar until dissolved.
- Stir in gelatin until smooth. Pour into a shallow dish and refrigerate until firm.
- Cut into small rounds, roll in sugar, and place one on each bite.
- Unmold chocolate bites and serve.
