Ingredients

  • 1 tbsp cornstarch mixed with 1 tbsp water
  • 2 cups heavy whipping cream (cold)
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • Fresh cherries with stems (for garnish)
  • Dark chocolate curls or shavings (for garnish)
  • Chocolate ganache drizzle (optional)

Instructions

  1. Preheat oven to 175°C (350°F). Grease and line two 8-inch round pans.
  2. In a bowl, sift flour, cocoa, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs and sugar until pale and fluffy. Add oil, buttermilk, and vanilla.
  4. Gradually fold in dry ingredients until smooth.
  5. Divide into pans and bake for 25–30 minutes, or until a toothpick comes out clean.
  6. Cool completely before assembling.
  7. In a saucepan, combine cherries, sugar, and cherry syrup. Bring to a simmer, add the cornstarch mixture, and cook until slightly thickened (2–3 minutes). Let cool completely.
  8. Beat chilled heavy cream, powdered sugar, and vanilla until stiff peaks form. Keep refrigerated.
  9. Slice each cake layer in half for four total layers (optional for taller presentation).
  10. Place one layer on a plate, brush lightly with cherry syrup, and spread a layer of whipped cream. Add a generous spoonful of cherry filling.
  11. Repeat layers, finishing with whipped cream on top.
  12. Drizzle with chocolate ganache, sprinkle chocolate curls, and top with fresh cherries.

Notes

  • Ensure the heavy cream is very cold for best whipping results.
  • For a more intense chocolate flavor, use dark cocoa powder.
