- 2 large eggs
- ½ cup vegetable oil (or applesauce)
- 1 cup grated carrots
- 1 cup grated zucchini (squeezed dry)
- 1 cup shredded apples
- ½ cup chopped nuts or dried fruit (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease two loaf pans.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, beat eggs and vegetable oil until well combined.
- Gently fold in grated carrots, zucchini, and shredded apples into the wet mixture.
- Gradually add the dry mixture to the wet ingredients until just combined.
- Divide the batter between the prepared loaf pans and top with nuts or dried fruit if desired.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let cool for 10 minutes before transferring to wire racks.

- For a healthier option, substitute applesauce for vegetable oil.
