Description

Delicious and crispy garlic chicken thighs coated in chili garlic sauce, perfect for any meal!


Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 1 cup rice flour
  • 3 tablespoons chili garlic sauce
  • 1 cup vegetable oil (canola or sunflower oil for frying)
  • 2 green onions (or chives as a substitute)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 cloves minced garlic
  • 2 tablespoons water

Instructions

  1. Start by cutting the chicken thighs into bite-sized pieces. This will ensure they cook evenly and get crispy all over.
  2. In a bowl, combine the chicken pieces with salt, pepper, and a tablespoon of chili garlic sauce. Let it marinate for at least 30 minutes to infuse the flavors.
  3. In a separate bowl, add the rice flour. Dredge each piece of marinated chicken in the rice flour, making sure they are well coated. Shake off any excess flour.
  4. In a deep pan or wok, heat enough oil for frying over medium-high heat. To test if the oil is hot enough, drop a small piece of coated chicken into the oil; it should sizzle immediately.
  5. Carefully add the coated chicken pieces to the hot oil in batches. Don’t overcrowd the pan; this will help them stay crispy. Fry until golden brown, about 5-7 minutes, then remove and place on paper towels to drain excess oil.
  6. In a small saucepan, heat a tablespoon of oil over medium heat. Add minced garlic and sauté until fragrant. Then stir in the remaining chili garlic sauce and a splash of water to create a smoother consistency. Simmer for a couple of minutes.
  7. In a large bowl, toss the crispy chicken with the chili garlic sauce until well coated. Garnish with sliced green onions and serve immediately!

Notes

  • Make sure not to overcrowd the frying pan to maintain crispiness.
  • This recipe can be adapted using chicken breasts or tenders as well.
