  • ½ cup (120 ml) vegetable oil
  • ½ cup (120 ml) milk
  • ½ cup (120 ml) dragon fruit purée (preferably red-fleshed)
  • 1 tsp lemon juice
  • Optional: pink food coloring (to intensify the hue)
  • For the Cream Cheese Frosting:
  • 225 g (8 oz) cream cheese, softened
  • ½ cup (115 g) unsalted butter, softened
  • 3 cups (360 g) powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp dragon fruit purée (for flavor + natural pink tint)
  • For the Decoration:
  • Fresh dragon fruit slices
  • Blackberries or blueberries
  • Mint leaves
  • Optional: sprinkle of dragon fruit seeds for contrast

Instructions

  1. Preheat oven to 175°C (350°F). Grease and line two 8-inch (20 cm) round pans.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, beat butter and sugar until creamy and fluffy (3–4 minutes).
  4. Add eggs one at a time, then mix in vanilla and oil.
  5. Blend in dragon fruit purée and lemon juice.
  6. Alternate adding dry ingredients and milk to the wet mixture, starting and ending with the dry.
  7. Add food coloring if desired to intensify the magenta tone.
  8. Divide the batter evenly between pans and smooth the tops.
  9. Bake for 25–30 minutes or until a toothpick inserted comes out clean.
  10. Let cool in pans 10 minutes, then transfer to a wire rack to cool completely.
  11. Beat cream cheese and butter until smooth.
  12. Add powdered sugar gradually, then vanilla and dragon fruit purée.
  13. Mix until fluffy and light.
  14. Place one cake layer on a plate, spread a thick layer of frosting.
  15. Add the second layer and cover the entire cake with remaining frosting.
  16. Chill for 30 minutes to set.
  17. Top with dragon fruit slices, blackberries, and mint leaves.
  18. Optionally, sprinkle dragon fruit seeds or drizzle a bit of purée for a tropical look.
