A vibrant and delicious Dragon Fruit Velvet Cake that combines the unique flavor of dragon fruit with a classic velvet cake texture, topped with creamy frosting and fresh fruits.

- 2 ½ cups (300 g) all-purpose flour
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup (170 g) unsalted butter, softened
- 1 ½ cups (300 g) sugar
- 3 large eggs
- 1 tsp vanilla extract
- ½ cup (120 ml) vegetable oil
- ½ cup (120 ml) milk
- ½ cup (120 ml) dragon fruit purée (preferably red-fleshed)
- 1 tsp lemon juice
- Optional: pink food coloring (to intensify the hue)
- For the Cream Cheese Frosting:
- 225 g (8 oz) cream cheese, softened
- ½ cup (115 g) unsalted butter, softened
- 3 cups (360 g) powdered sugar
- 1 tsp vanilla extract
- 1 tbsp dragon fruit purée (for flavor + natural pink tint)
- For the Decoration:
- Fresh dragon fruit slices
- Blackberries or blueberries
- Mint leaves
- Optional: sprinkle of dragon fruit seeds for contrast
Instructions
- Preheat oven to 175°C (350°F). Grease and line two 8-inch (20 cm) round pans.
- In a bowl, whisk flour, baking powder, baking soda, and salt. Set aside.
- In another bowl, beat butter and sugar until creamy and fluffy (3–4 minutes).
- Add eggs one at a time, then mix in vanilla and oil.
- Blend in dragon fruit purée and lemon juice.
- Alternate adding dry ingredients and milk to the wet mixture, starting and ending with the dry.
- Add food coloring if desired to intensify the magenta tone.
- Divide the batter evenly between pans and smooth the tops.
- Bake for 25–30 minutes or until a toothpick inserted comes out clean.
- Let cool in pans 10 minutes, then transfer to a wire rack to cool completely.
- Beat cream cheese and butter until smooth.
- Add powdered sugar gradually, then vanilla and dragon fruit purée.
- Mix until fluffy and light.
- Place one cake layer on a plate, spread a thick layer of frosting.
- Add the second layer and cover the entire cake with remaining frosting.
- Chill for 30 minutes to set.
- Top with dragon fruit slices, blackberries, and mint leaves.
- Optionally, sprinkle dragon fruit seeds or drizzle a bit of purée for a tropical look.
