A comforting soup featuring vegetable potstickers in a flavorful broth with ginger and bok choy.
Ingredients

- 4 cups chicken broth
- 1 inch ginger, peeled and thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon ground white pepper
- 1 package (about 20–25) vegetable potstickers, fresh or frozen
- 2 cups chopped bok choy
- 1/2 cup sliced green onions
- to taste Sriracha or chili garlic sauce, for serving
Instructions
- In a large pot, combine the chicken broth, ginger slices, minced garlic, soy sauce, sesame oil, and white pepper.
- Bring the mixture to a boil over medium-high heat.
- Once boiling, reduce the heat to a simmer and add the vegetable potstickers. If using frozen potstickers, cook according to package directions (usually about 5-7 minutes).
- Add the chopped bok choy to the soup during the last 2 minutes of cooking time, allowing it to wilt slightly.
- Remove from heat and ladle the soup into bowls.
- Garnish with sliced green onions.
- Serve immediately with sriracha or chili garlic sauce, if desired.

- This soup is versatile; feel free to add other vegetables you enjoy.
