Description

A simple and delicious crustless quiche made with fresh zucchini, cherry tomatoes, and basil, perfect for a light meal or brunch.


Ingredients

Scale
  • 2 medium zucchinis, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 6 large eggs
  • 1 cup milk (or half-and-half for creamier texture)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp fresh basil, chopped (plus extra for garnish)
  • ½ tsp dried oregano
  • Salt & black pepper, to taste

Instructions

  1. Prepare vegetables
  2. Heat olive oil in a skillet.
  3. Sauté onion until soft, add garlic and zucchini, and cook for 5 minutes until slightly tender.
  4. Season with salt, pepper, and oregano.
  5. Prepare egg mixture
  6. In a large bowl, whisk eggs, milk, mozzarella, Parmesan, and fresh basil.
  7. Stir in sautéed zucchini mixture.
  8. Assemble the quiche
  9. Preheat oven to 180°C (350°F).
  10. Grease a 9-inch (23 cm) pie dish.
  11. Pour in the mixture and top with cherry tomatoes.
  12. Bake
  13. Bake uncovered for 35–40 minutes, until golden on top and set in the center.
  14. Let cool 10 minutes before slicing.
  15. Serve
  16. Garnish with fresh basil leaves and serve warm or at room temperature.

  • For a creamier texture, use half-and-half instead of milk.
  • Feel free to add other vegetables like bell peppers or spinach.
