Description
A simple and delicious crustless quiche made with fresh zucchini, cherry tomatoes, and basil, perfect for a light meal or brunch.

- 2 medium zucchinis, thinly sliced
- 1 cup cherry tomatoes, halved
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 6 large eggs
- 1 cup milk (or half-and-half for creamier texture)
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 tbsp fresh basil, chopped (plus extra for garnish)
- ½ tsp dried oregano
- Salt & black pepper, to taste
Instructions
- Prepare vegetables
- Heat olive oil in a skillet.
- Sauté onion until soft, add garlic and zucchini, and cook for 5 minutes until slightly tender.
- Season with salt, pepper, and oregano.
- Prepare egg mixture
- In a large bowl, whisk eggs, milk, mozzarella, Parmesan, and fresh basil.
- Stir in sautéed zucchini mixture.
- Assemble the quiche
- Preheat oven to 180°C (350°F).
- Grease a 9-inch (23 cm) pie dish.
- Pour in the mixture and top with cherry tomatoes.
- Bake
- Bake uncovered for 35–40 minutes, until golden on top and set in the center.
- Let cool 10 minutes before slicing.
- Serve
- Garnish with fresh basil leaves and serve warm or at room temperature.
Notes
- For a creamier texture, use half-and-half instead of milk.
- Feel free to add other vegetables like bell peppers or spinach.
