Description

Soft vanilla cupcakes topped with silky cream cheese frosting and a fluffy polar bear head made from marshmallows and coconut. Cute, festive, and surprisingly easy!


Ingredients

  • 150 g sugar
  • 120 g unsalted butter (softened)
  • 2 eggs
  • 1 tsp vanilla extract
  • 200 g flour
  • 1 ½ tsp baking powder
  • 1 pinch of salt
  • 120 ml milk
  • 200 g cream cheese (cold)
  • 120 g unsalted butter (soft, not melted)
  • 350 g powdered sugar (sifted)
  • 1 tsp vanilla extract
  • 12 large marshmallows
  • 3 tbsp honey or melted white chocolate (for sticking)
  • Shredded coconut (fine)
  • 24 mini marshmallows (ears)
  • 50 g dark chocolate (nose + eyes)
  • 40 g white chocolate (snout base)

Instructions

  1. Preheat oven to 175°C.
  2. Cream butter and sugar until fluffy (2–3 min).
  3. Add eggs one at a time and vanilla.
  4. Add flour, baking powder, and salt.
  5. Pour in the milk, mix until smooth.
  6. Fill cupcake liners 2/3 full.
  7. Bake for 18–20 min until lightly golden.
  8. Cool completely.
  9. Beat the butter until creamy for the frosting.
  10. Add cream cheese, mix 10–20 seconds only (don’t overbeat).
  11. Add vanilla and powdered sugar, mix until smooth and thick.
  12. Pipe a tall swirl on each cupcake using a large star tip.
  13. Dip each large marshmallow lightly in honey or white chocolate.
  14. Roll in shredded coconut to create fluffy “fur.”
  15. Pipe a small oval of melted white chocolate on the front center for the snout.
  16. Add a dot of dark chocolate for the nose.
  17. Cut mini marshmallows in half, dip the sticky side in coconut, and attach on top of the marshmallow head as ears.
  18. Pipe two tiny dots of dark chocolate for the eyes.
  19. Let the heads set for 10 minutes.
  20. Place each finished polar bear head gently onto the frosting swirl.
  21. Sprinkle a little more coconut like snow.

Notes

  • Ensure the butter for the frosting is soft but not melted.
  • Use a large star tip for piping the frosting for a better visual effect.
  • Let the polar bear heads set properly to maintain their shape.
