- 1½ Cups / 190g Flour – Plain all purpose flour
- 4 tsp Baking Powder – Make sure you are using baking powder and not baking soda!
- ½ tsp Salt – If you’re using salted butter omit the salt.
- 3 Tbsp Sugar – (Optional)
- 1 Egg – Room temperature.
- 1¼ Cups / 310ml Milk – Whole milk or preferred dairy/non-dairy.
- 4 Tbsp / 60g Melted Butter + more for cooking – Butter can be replaced with oil or margarine.
Instructions
- Combine all the dry ingredients (flour, baking powder, salt, and optional sugar) into a mixing bowl and whisk well.
- Make a well in the center and pour in the wet ingredients (egg, milk, and melted butter). Whisk together until just combined. Do not overmix; a few lumps are fine.
- Heat a non-stick pan or griddle over medium heat and grease with butter or oil.
- Pour ¼ cup of pancake batter into the hot pan for each pancake. Cook for 2-3 minutes on each side, or until golden brown and cooked through, watching for bubbles on the surface before flipping.
- Serve immediately with your favorite toppings.
Notes
- For an extra fluffy texture, separate the egg and beat the white until stiff peaks form before folding it into the batter.
- Customize your pancakes with blueberries, chocolate chips, or nuts mixed into the batter.
