A delicious and savory dish combining sweet corn and crispy bacon, perfect as a side or a main.
Ingredients

- 4 cups corn kernels (fresh or frozen; drained if canned)
- 6 slices thick-cut bacon, chopped
- 2 tbsp butter
- 1 small onion, finely diced (optional but recommended)
- 1–2 cloves garlic, minced
- ½ tsp paprika (optional, adds warmth)
- Salt & black pepper to taste
- 1 tsp sugar (optional — enhances sweetness)
- Chopped parsley or green onion for garnish
Instructions
- In a large skillet, cook chopped bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside. Leave 2–3 tablespoons of the bacon drippings in the skillet (pour off excess).
- Add butter to the skillet with the bacon fat. If using, cook onion 3–4 minutes until soft. Add garlic and cook 30 seconds — just until fragrant.
- Add the corn to the skillet. Stir and cook 8–12 minutes, letting the corn slightly brown + caramelize. Season with salt, pepper, paprika, and (optional) sugar.
- Stir the crispy bacon back in. Taste, adjust seasoning. Garnish with parsley or green onion.
Notes
- For a spicier version, add a pinch of cayenne pepper.
- This dish can be served warm or at room temperature.
- Leftovers can be stored in the refrigerator for up to 3 days.
