Ingredients

  • 4 cups corn kernels (fresh or frozen; drained if canned)
  • 6 slices thick-cut bacon, chopped
  • 2 tbsp butter
  • 1 small onion, finely diced (optional but recommended)
  • 12 cloves garlic, minced
  • ½ tsp paprika (optional, adds warmth)
  • Salt & black pepper to taste
  • 1 tsp sugar (optional — enhances sweetness)
  • Chopped parsley or green onion for garnish

Instructions

  1. In a large skillet, cook chopped bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside. Leave 2–3 tablespoons of the bacon drippings in the skillet (pour off excess).
  2. Add butter to the skillet with the bacon fat. If using, cook onion 3–4 minutes until soft. Add garlic and cook 30 seconds — just until fragrant.
  3. Add the corn to the skillet. Stir and cook 8–12 minutes, letting the corn slightly brown + caramelize. Season with salt, pepper, paprika, and (optional) sugar.
  4. Stir the crispy bacon back in. Taste, adjust seasoning. Garnish with parsley or green onion.

Notes

  • For a spicier version, add a pinch of cayenne pepper.
