Ingredients
Scale
- 1 cup (230 g) unsalted butter, melted
- 2 cups (400 g) packed light brown sugar
- 2 large eggs
- 2 tsp pure vanilla extract
- 2 cups (250 g) all-purpose flour
- 1 tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon (optional, for warmth)
- 8 oz (225 g) cream cheese, softened
- ½ cup (115 g) unsalted butter, softened
- 2 cups (240 g) powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 9×9-inch (23×23 cm) baking pan with parchment paper.
- In a large bowl, whisk together melted butter and brown sugar until smooth.
- Add eggs and vanilla extract; whisk again until well combined.
- In a separate bowl, mix flour, baking powder, baking soda, salt, and cinnamon.
- Fold the dry ingredients into the wet ingredients until just combined — don’t overmix.
- Pour the batter into the prepared pan and smooth the top evenly.
- Bake for 25–30 minutes, or until a toothpick inserted in the center comes out mostly clean (a few moist crumbs are fine).
- Let the blondies cool completely in the pan before frosting.
- Beat cream cheese and butter together until creamy and smooth (about 2 minutes).
- Add powdered sugar, vanilla extract, and salt, and beat until fluffy (2–3 minutes more).
- Spread the frosting generously over the cooled blondies.
- Chill for at least 30 minutes to set before slicing.
Notes
- For added flavor, consider adding nuts or chocolate chips to the blondie batter.
- Store leftovers in an airtight container in the refrigerator for up to a week.
