Description

A delicious and hearty recipe for Fully Loaded Beef & Cheddar Nacho Mountain, perfect for gatherings or a fun family meal.


Ingredients

  • 1 lb (450g) ground beef
  • 1 tbsp oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • 1 tsp salt
  • ¼ cup beef broth or water
  • ½ cup salsa or tomato sauce (optional)
  • 1 large bag tortilla chips (thick & sturdy)
  • 2 cups shredded cheddar (or cheddar + Monterey Jack mix)
  • 12 jalapeños, thinly sliced
  • 1 cup pico de gallo (or chopped tomato + onion + cilantro)
  • Sour cream
  • Fresh cilantro, chopped

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add onion and cook 3–4 minutes until soft.
  3. Add garlic and cook 30 seconds.
  4. Add ground beef and cook until browned.
  5. Add chili powder, cumin, paprika, salt, and pepper.
  6. Stir in beef broth and salsa.
  7. Let simmer 3–5 minutes to get juicy and flavorful.
  8. Preheat oven to 400°F (200°C).
  9. On a large baking sheet or skillet, spread a thick base layer of chips.
  10. Sprinkle half the cheese over the chips.
  11. Add half the beef.
  12. Repeat to build a second layer.
  13. Sprinkle remaining cheese on top.
  14. Bake 8–10 minutes, until the cheese is fully melted & bubbling.
  15. Remove and top with pico de gallo, sliced jalapeños, sour cream, and fresh cilantro.

Notes

  • For extra flavor, consider adding black olives or guacamole as toppings.
  • Adjust the spiciness by varying the amount of jalapeños.
