Ingredients

  • 2 tbsp heavy cream (to adjust consistency)
  • Gel food coloring (neon green, electric blue, violet, and black)
  • Edible glitter or luster dust (optional for sparkle)
  • Small pastel sprinkles (for “stars”)

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with dark or glitter cupcake liners.
  2. In one bowl, whisk flour, cocoa, baking soda, baking powder, and salt.
  3. In another bowl, beat sugar, oil, eggs, and vanilla until smooth.
  4. Add dry ingredients alternately with buttermilk, mixing until just combined.
  5. Divide batter evenly into cupcake liners and bake for 18–20 minutes, until a toothpick comes out clean. Cool completely.
  6. Beat butter until light and fluffy.
  7. Gradually add powdered sugar, lemon juice, lime zest, and vanilla.
  8. Add heavy cream if needed for a silky texture.
  9. Divide buttercream into 3–4 bowls. Tint one neon green, one violet, one blue, and leave one plain or slightly tinted black.
  10. Place spoonfuls of each color side by side onto a piece of plastic wrap. Roll into a log.
  11. Snip one end, place into a piping bag fitted with a star tip, and pipe swirls to create a galaxy effect.
  12. Dust with edible glitter for a shimmering galaxy look.
  13. Add small pastel sprinkles as “stars.”
  14. Chill slightly to set, then serve!
