- 1 ½ cups all-purpose flour
- ½ cup cocoa powder (dark for rich color)
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 cup granulated sugar
- ½ cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup buttermilk
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 tbsp fresh lemon juice
- 1 tbsp lime zest
- 1 tsp vanilla extract
- 2 tbsp heavy cream (to adjust consistency)
- Gel food coloring (neon green, electric blue, violet, and black)
- Edible glitter or luster dust (optional for sparkle)
- Small pastel sprinkles (for “stars”)
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with dark or glitter cupcake liners.
- In one bowl, whisk flour, cocoa, baking soda, baking powder, and salt.
- In another bowl, beat sugar, oil, eggs, and vanilla until smooth.
- Add dry ingredients alternately with buttermilk, mixing until just combined.
- Divide batter evenly into cupcake liners and bake for 18–20 minutes, until a toothpick comes out clean. Cool completely.
- Beat butter until light and fluffy.
- Gradually add powdered sugar, lemon juice, lime zest, and vanilla.
- Add heavy cream if needed for a silky texture.
- Divide buttercream into 3–4 bowls. Tint one neon green, one violet, one blue, and leave one plain or slightly tinted black.
- Place spoonfuls of each color side by side onto a piece of plastic wrap. Roll into a log.
- Snip one end, place into a piping bag fitted with a star tip, and pipe swirls to create a galaxy effect.
- Dust with edible glitter for a shimmering galaxy look.
- Add small pastel sprinkles as “stars.”
- Chill slightly to set, then serve!
