Description

Garlic Butter Bacon Cheeseburger Rollups are everything you love about a cheeseburger—juicy beef, smoky bacon, melty cheese—wrapped in flaky puff pastry and brushed with savory garlic butter. Perfect for game day, parties, or a fun family dinner, they’re quick to make, ridiculously tasty, and sure to disappear fast.


Ingredients

  • 1 sheet puff pastry, thawed

  • 1 lb ground beef

  • 1 small onion, finely chopped

  • 1 tbsp ketchup

  • 1 tbsp mustard

  • 6 slices cooked bacon, crumbled

  • 1 cup shredded cheddar cheese

  • 2 tbsp butter, melted

  • 1 tsp garlic powder

  • 1 tsp parsley (optional, for garnish)


Instructions

  • In a skillet over medium heat, cook ground beef and onion until beef is browned and onion is soft. Drain excess fat.

  • Stir in ketchup and mustard. Mix well, then remove from heat and let cool slightly.

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

  • On a lightly floured surface, roll puff pastry into a rectangle.

  • Spread beef mixture evenly over pastry, leaving a small border.

  • Sprinkle with bacon and cheddar cheese.

  • Roll up tightly from one long side to form a log.

  • Slice into 1-inch pieces and place cut-side up on the baking sheet.

  • Mix melted butter with garlic powder and brush over rollups.

  • Bake 18–22 minutes, until puffed and golden.

 

  • Garnish with parsley if desired and serve warm.

Notes

  • Cool the filling before spreading it onto the pastry to avoid sogginess.

  • Try pepper jack for a spicy kick or swap ketchup/mustard for BBQ sauce.

  • These can be assembled up to 24 hours ahead—cover and refrigerate until ready to bake.

  • Freeze unbaked rollups on a tray, then store in a freezer bag for up to 2 months. Bake from frozen, adding 3–4 extra minutes.
