Ingredients

  • 4 thick slices of bread (Texas toast or brioche works best)
  • 2 cups mozzarella cheese (shredded)
  • 1 lb (450 g) large shrimp, peeled & deveined (tails on optional)
  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • ½ tsp red pepper flakes (optional)
  • Salt & black pepper, to taste
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp Parmesan cheese (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Arrange bread slices on a parchment-lined baking sheet. Sprinkle each slice generously with mozzarella cheese. Bake for 8–10 minutes, or until cheese is bubbly and lightly golden.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Add garlic and red pepper flakes; sauté 30 seconds until fragrant. Add shrimp, season with salt and pepper, and cook 2–3 minutes per side until pink and cooked through. Toss with fresh parsley.
  3. Remove cheesy bread from oven. Spoon garlic butter shrimp evenly on top of each toast slice. Drizzle with pan garlic butter. Garnish with extra parsley and Parmesan.

Notes

  • For a spicier kick, increase the amount of red pepper flakes.
  • Feel free to use different types of cheese for variation.
