Description

Delicious garlic herb chicken served with creamy mashed potatoes and sweet glazed carrots.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 2 teaspoons dried Italian herbs
  • Salt and pepper (to taste)
  • 2 pounds russet potatoes (peeled and cubed)
  • 4 tablespoons butter (for potatoes)
  • 1/2 cup milk
  • 1 pound carrots (peeled and sliced)
  • 2 tablespoons honey
  • 1 tablespoon butter (for carrots)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). In a small bowl, mix together olive oil, minced garlic, Italian herbs, salt, and pepper. Rub this mixture evenly over all chicken breasts.
  2. Heat a large skillet over medium-high heat. Add chicken breasts and sear each side for about 4 minutes until golden brown. Transfer chicken to a baking dish and bake for 20 minutes or until internal temperature reaches 165°F.
  3. While chicken bakes, place cubed potatoes in a large pot and cover with water. Bring to a boil and cook for 15-20 minutes until potatoes are fork-tender. Start potatoes when chicken enters the oven for perfect timing.
  4. Drain potatoes and return to pot. Add 4 tablespoons butter and milk, then mash until smooth. Season with salt and pepper to taste.
  5. In a medium saucepan, melt 1 tablespoon butter over medium heat. Add sliced carrots and cook for about 5 minutes until starting to soften. Add honey, salt, and pepper, and continue cooking until carrots are fork-tender and nicely glazed.
  6. Once chicken is cooked, let it rest for 5 minutes before slicing.
  7. Serve garlic herb chicken with mashed potatoes and glazed carrots. Garnish with fresh parsley and enjoy.
