- 1/4 cup soy sauce
- 2 tablespoons mirin
- 4 cloves minced garlic
- 1 tablespoon grated ginger

- 1 cup potato starch

Instructions
- In a large bowl, combine 1/4 cup soy sauce, 2 tablespoons mirin, 4 cloves of minced garlic, 1 tablespoon grated ginger, and a pinch of black pepper. Add the chicken thighs, ensuring they are fully coated. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.
- In another bowl, add 1 cup of potato starch. You can add a pinch of salt and pepper to this if you like.
- In a large, deep skillet or pot, pour in enough vegetable oil to submerge the chicken pieces (about 2 inches deep). Heat the oil over medium-high heat until it reaches 350°F (175°C).
- Remove the marinated chicken from the refrigerator. Take each piece and dredge it in the potato starch, ensuring an even coating. Shake off any excess starch.
- Carefully place the coated chicken pieces into the hot oil, making sure not to overcrowd the pan. Fry in batches if necessary. Cook for about 5-7 minutes on each side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C).
- Once cooked, transfer the fried chicken to a wire rack or paper towels to drain excess oil.
