Description

A flavorful and comforting bowl of soup with savory wontons, aromatic broth, and fresh vegetables.


Ingredients

Scale
  • 2 tablespoons sesame oil or olive oil
  • 1 large shallot, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 1 1/2 tablespoons fresh ginger, peeled and grated
  • 1 teaspoon brown sugar
  • 1/41/2 teaspoon red pepper flakes
  • 5 ounces shiitake mushrooms, sliced
  • 2 cups chopped bok choy (stems + leafy tops)
  • 1 1/2 tablespoons soy sauce
  • 2 cups low-sodium chicken stock
  • 1 cup water
  • 2 tablespoons fresh lemon juice
  • 8 ounces frozen chicken or vegetable wontons/potstickers
  • 1/4 cup chopped scallions
  • to taste chili crisp

Instructions

  1. Heat the sesame or olive oil in a large pot over medium heat.
  2. Once shimmering, add the sliced shallot and cook for 4–6 minutes, until softened and lightly golden.
  3. Stir in the garlic, ginger, brown sugar, and red pepper flakes. Cook for 1–2 minutes until fragrant.
  4. Add the sliced shiitake mushrooms and cook another 2–3 minutes, until they soften.
  5. Add bok choy and sauté for 1 minute to soften slightly.
  6. Pour in the soy sauce, chicken stock, and water. Bring to a gentle boil.
  7. Add the frozen chicken or veggie wontons and boil for 2–3 minutes, or until they float and are heated through.
  8. Remove the pot from heat. Stir in the fresh lemon juice and scallions. Taste the broth and add extra soy sauce if needed.
  9. Ladle into bowls and finish with more scallions, a spoonful of chili crisp, and extra red pepper flakes if you like heat.
  10. Serve warm and enjoy a bright, comforting, flavorful bowl of soup.

Notes

  • Feel free to adjust the level of heat by modifying the amount of red pepper flakes.
  • For a vegetarian version, use vegetable stock instead of chicken stock.
